Spicy Tomato Pasta

Ingredients

  • 400 g penne
  • 100 g sun‑dried tomatoes in oil (jar)
  • 1 bunch parsley
  • 20 g butter
  • 1 Garlic clove
  • 10 drops chili oil
  • salt (pepper)
  • 40 g parmesan (whole block)
  • parsley (for garnish)

Instructions

    Cook pasta in boiling salted water according to package instructions.

    Meanwhile, blend sun‑dried tomatoes, 2 tbsp of the oil from the jar, and parsley leaves into a paste.

    Drain pasta, reserving about one cup of cooking water. Heat butter in a pan, toss pasta in it. Add tomato paste and reserved water. Squeeze in the garlic clove. Season with chili oil, salt, and pepper.
