Ingredients
- 500 g whole wheat spaghetti
- Salt
- 80 g dandelion leaves
- 2 cloves garlic
- 2 tbsp olive oil
- 40 g pine nuts
- a splash of dry white wine
- Pepper (freshly ground)
- 40 g freshly grated Parmesan

Cook the pasta in salted water until al dente.

Meanwhile, rinse, clean, and roughly chop the dandelion leaves; peel and finely mince the garlic. In a hot pan with olive oil, lightly brown the pine nuts. Deglaze with white wine and let reduce slightly. Toss the drained pasta with the dandelion mixture and season with salt and pepper.

Plate the pasta and sprinkle grated parmesan on top before serving.
