Ingredients

  • 500 g chili band noodles
  • Salt
  • 1 Shallot
  • 2 Garlic cloves
  • 400 g fresh chanterelles
  • 20 g butter
  • 0.5 bunch of curly parsley
  • Salt
  • Pepper (freshly ground)

Instructions

    Cook the noodles in boiling salted water until al dente. Meanwhile, peel and finely chop the shallot and garlic. Clean the mushrooms and cut them into small pieces if desired. In a pan, melt the butter and sauté the shallot and garlic cubes until translucent. Add the mushrooms and cook, turning occasionally, until all liquid has evaporated.

    Wash the parsley, shake off excess water, remove leaves from stems, and mix into the mushrooms. Season everything with salt and pepper. Drain the cooked noodles, let them dry briefly, add to the mushroom mixture, toss quickly, and serve in preheated bowls. Optionally sprinkle freshly grated Parmesan on top.
