- 0.5 bunch Parsley
- 4 anchovy fillets
- 2 Garlic cloves
- 1 tbsp balsamic vinegar
- 2 tbsp breadcrumbs
- 2 tbsp extra virgin olive oil
- Salt
- ground pepper
- 350 g green mild peperoncini

Peel and finely chop the garlic. Wash, dry, and finely chop the parsley (best with a paring knife). Drain the anchovies and cut them small. Mix vinegar, breadcrumbs, garlic, parsley, anchovies, and oil. Season with salt and pepper.

In a large pan briefly toast until the breadcrumbs turn golden‑yellow. Then cut off a lid from each peperoncini and remove the seeds. Fill with the mixture and serve immediately. A suitable aperitif accompanies it.
