Ingredients

  • 600 g Mushrooms
  • 150 g breadcrumbs
  • Salt
  • black pepper (freshly ground)
  • 3 eggs
  • 2 tbsp freshly grated Parmesan
  • 1 tsp Sweet paprika powder
  • 1 tbsp fresh chopped thyme
  • 30 g herb butter (for serving)

Instructions

    Clean the mushrooms and skewer them onto 12 wooden sticks.

    Place the breadcrumbs in a shallow dish and season with a little salt and pepper. In separate shallow dishes beat each egg, one with Parmesan, one with paprika, and one with thyme.

    Dip one-third of the skewers into each egg mixture, then coat in breadcrumbs. Arrange on a parchment-lined baking sheet and bake at 200°C (180°C fan) for about 15–18 minutes, turning once. Serve the breaded mushrooms with herb butter.
