Spicy Remoulade

Ingredients
- 1 hard-boiled egg
- 2 jars pickles
- 6 pearl onions (jar)
- 2 anchovy fillets (in oil)
- 1 tsp capers (jar)
- 120 g mayonnaise
- 80 g crème fraîche
- 1 tsp sharp mustard
- 1 tbsp freshly chopped parsley
- 0.5 tsp freshly chopped tarragon
- Salt
- pepper (ground)
- 1 tsp lemon juice
Instructions

Peel the egg and finely chop it. Drain the pickles and onions, then dice them into very small cubes. Rinse the anchovy fillets, pat dry, and finely chop with the capers.

Whisk together mayonnaise, crème fraîche, and mustard. Fold in the egg, onion and pickle cubes, anchovies, capers, and herbs. Season with salt, pepper, and lemon juice.
