Spicy Paprika Dip

Ingredients
- 4 red bell peppers
- 1 Garlic clove
- 2 tbsp roasted pine nuts
- 100 ml olive oil
- Salt
- Pepper (freshly ground)
- 1 tsp liquid honey
- Lemon juice

Preheat the oven to 250°C with top and bottom heat.

Wash the peppers, halve them, remove seeds and white membranes, and place them skin side up on a parchment-lined baking sheet.

Roast in the preheated oven until the skins blister and blacken. Remove the halves, cover with a damp kitchen towel, and let rest briefly. Then peel off the skins and dice the flesh into small cubes. Set aside 2 tbsp of diced peppers.

Peel the garlic, roughly chop it, and combine with pine nuts and remaining paprika cubes in a blender. Add oil until a creamy consistency forms, then season with salt, pepper, honey, and lemon juice. Return the reserved paprika cubes to the mixture and serve the dip in bowls.
