Spicy Potato Cheese Waffles

Ingredients

  • 180 g starchy boiling potatoes
  • Salt
  • 1 small onion
  • 1 tbsp plant oil
  • Salt
  • a pinch sugar
  • 180 g flour
  • 1.5 tsp Baking Powder
  • 2 Eggs
  • 60 g softened butter
  • 250 ml milk
  • 70 g Reblochon cheese
  • butter (for the waffle iron)

Instructions

    Wash the potatoes thoroughly and cook them in boiling salted water for 25-30 minutes. While they simmer, peel and finely dice the onion, then sauté it in hot oil until soft; remove and set aside. Drain the potatoes, let them steam dry, peel, and press through a potato masher. Mix flour with baking powder and a pinch of salt, then whisk together with eggs, butter, and milk until smooth. Fold in the mashed potatoes, sautéed onion, and diced Reblochon cheese.

    Preheat and grease the waffle iron. Spoon 2–3 tbsp of batter onto the iron and bake successive waffles until golden brown.
