Spicy Plum Sauce

Ingredients

  • 400 g blue plums
  • 1 Shallot
  • 1 cm fresh ginger
  • 1 tbsp butter
  • 1 tsp powdered sugar
  • 125 ml dry red wine
  • 0.5 cinnamon stick
  • 3 Cloves
  • 2 allspice berries
  • 1 star anise
  • 1 tsp plum jam
  • Salt
  • Pepper (from the grinder)

Instructions

    Wash the plums, halve and pit them. Peel and finely chop the shallot and ginger, sauté in 1 tbsp melted butter.

    Add the plums, dust with powdered sugar, caramelize, deglaze with wine. Add spices and reduce to half. Remove spices and season sauce with plum jam, salt and pepper.
