Ingredients
- 500 g garlic
- Salad?
- 250 ml white wine vinegar
- 50 g sugar
- 1 tsp freshly chopped rosemary
- 1 tsp freshly chopped thyme
- 0.5 tsp freshly chopped tarragon
- 2 Bay leaves
- 0.5 tsp juniper berries
- 0.5 tsp Peppercorns
- 1 tbsp mustard seeds

Peel the garlic, blanch in boiling salted water for about 3 minutes, drain, rinse with cold water, let dry and place in a jar.

Bring vinegar with sugar, about 100 ml water, herbs and spices to a boil in a pot and simmer for about 5 minutes. Pour the broth over the garlic, seal the jar and allow to cool. Store in a cool dark place.
