Ingredients

  • 2 kg pickled cucumbers
  • 4 Spring Onions
  • 400 ml apple cider vinegar
  • 150 g honey
  • 3 tbsp salt
  • 8 star anise
  • 1 tbsp juniper berries
  • 2 tbsp mustard seeds

Instructions

    Peel, clean, and cut the cucumbers lengthwise into thick slices. Wash and trim the spring onions, then slice them into rings.

    Combine the vinegar with about 300 ml water, honey, salt, and the spices in a pot and bring to a boil. Add the cucumbers and continue boiling. Using a skimmer, lift the cucumbers from the brine and distribute them into prepared jars. Pour the hot brine over them. Seal tightly and let cool.

    Allow to mature for about 4 weeks before consumption.
