Leafy Salad with Tofu and Tomatoes

Ingredients
- 300 g Tofu
- 3 tbsp Soy sauce
- 2 tbsp Apple cider vinegar
- 2 tbsp soybean oil
- 2 tsp freshly ground pepper
- 300 g tomatoes
- 300 g mixed leafy greens
- 1 small white onion
- 30 g Parmesan
Instructions

Cut the tofu into 1.5 cm cubes and toss in a bowl with soy sauce, vinegar, and 1 tbsp soybean oil. Sprinkle pepper over it and mix thoroughly. Let the tofu marinate for about 10 minutes, turning occasionally.

Wash, clean, and quarter the tomatoes.

Peel and dice the onion.

Wash, clean, rinse, spin dry, and tear the leafy greens into bite‑sized pieces.

Place the tomatoes and leafy greens in a bowl and pour the tofu marinade over them.

Heat the remaining soybean oil in a pan and fry the tofu cubes over medium heat while turning, then add the onion at the end and fry briefly before mixing everything into the salad. Grate parmesan with a microplane on top.
