Arugula Cucumber Soup with Shrimp

Try the delicious arugula cucumber soup with shrimp from Spoonsparrow

Ingredients

  • 0.5 Salad Cucumber
  • 60 g arugula (2 handfuls)
  • 2 Garlic cloves
  • 500 ml vegetable broth (cooled)
  • Salt
  • Pepper
  • 1 tbsp Lemon Juice
  • 240 g small shrimp (12 ready-to-eat shrimp)
  • 2 tbsp olive oil

Instructions

    Wash half the cucumber, halve it, deseed and dice into small cubes.

  2. 2.

    Wash arugula and dry. Peel garlic cloves and roughly cube them.

  3. 3.

    Blend cucumber cubes with arugula, garlic and vegetable broth until smooth. Season with salt, pepper and lemon juice.

  4. 4.

    Fill soup into 4 glasses, garnish each with 3 shrimp and drizzle olive oil on top.
