Spicy Oven-Baked Chicken Parts with Tomatoes

A flavorful chicken dish featuring fresh ingredients and a robust tomato sauce.
Ingredients
- 0.5 tsp Coriander seeds
- 0.5 tsp Peppercorns
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tbsp liquid honey
- 1 pinch saffron (ground)
- 400 g canned diced tomatoes
- 8 chicken thigh tops
- 150 g plum tomatoes
- 150 g chorizo
- salt to taste
- 150 ml red wine
- parsley for garnish
Instructions

Crush the coriander and peppercorns in a mortar, transfer to a bowl. Press the peeled garlic through a press and mix with oil, honey, saffron, and diced tomatoes. Rinse the chicken thigh tops, pat dry, and fold into the tomato mixture. Cover and chill for about 1 hour to marinate.

Preheat the oven to 180°C fan (356°F).

Wash, trim, and halve the plum tomatoes. Slice the chorizo. Combine with the chicken parts, season with salt, and place everything in a baking dish. Pour in the red wine and bake uncovered for about 40 minutes until golden brown, turning occasionally and basting with sauce.
