Spicy Mozzarella Noodles

Mozzarella-Nudeln mit getrockneten Tomaten und Pinienkernen: Diese Pasta ist im ganz einfach auf dem Teller und die Nudeln liefern und B-Vitamine!

Ingredients

  • 25 g sun-dried tomatoes (without oil)
  • 150 g whole wheat pasta (e.g. farfalle)
  • Salt
  • 125 g buffalo mozzarella
  • 3 sprigs oregano
  • 2 tbsp olive oil
  • 20 g pine nuts
  • Pepper

Instructions

    Soak the sun-dried tomatoes in a small bowl with boiling water for 15 minutes.

    Cook the pasta according to package directions in plenty of boiling salted water until al dente.

  3. 3.

    In the meantime, drain the mozzarella well and tear it into small pieces.

  4. 4.

    Wash, dry, pluck the leaves from the oregano, and finely chop them.

  5. 5.

    Drain the soaked tomatoes, squeeze them lightly, and roughly dice them.

    Heat the olive oil in a pan, toast the pine nuts in it over medium heat while stirring for 2-3 minutes until lightly browned.

    Add the tomatoes and sauté briefly. Stir in 2 tbsp of the hot pasta water.

  8. 8.

    Drain the cooked pasta well.

  9. 9.

    Add the pasta to the pan and mix well with the pine nuts and tomato pieces.

  10. 10.

    Mix in the mozzarella and oregano. Season with salt and pepper and serve immediately.
