Sage Vegetable Gnocchi

The sage vegetable gnocchi with sage and cherry tomatoes from Spoonsparrow are quick to prepare and a perfect dinner!
Ingredients
- 150 g Spring onions (2 bunches)
- 3 stems Sage
- 2 tbsp olive oil
- 300 g Gnocchi (refrigerated)
- 250 g Cherry Tomatoes
- Salt
- Pepper
- 100 g Ricotta

Wash spring onions, clean and cut into pieces about 2 cm large.

Wash sage, shake dry and pluck the leaves. Set a few aside for garnish, cut the rest into strips.

Heat oil in a non-stick pan and briefly sauté the gnocchi in medium heat.

Add spring onions and sage strips. Cover and simmer over medium heat for about 5 minutes.

Meanwhile, wash cherry tomatoes, halve half of the tomatoes if desired. Add them to the gnocchi in the pan. Heat open over medium heat for 2 minutes. Season with salt and pepper.

Serve sage vegetable gnocchi. Distribute the ricotta in small portions on top with a teaspoon. Garnish with sage leaves.
