The Quinoa Vegetable Bowl with Peanut Dressing from Spoonsparrow is a vitamin-rich bowl with exotic sauce and fruity topping.

Ingredients

  • 100 g Quinoa
  • 1 tsp turmeric powder
  • Salt
  • 300 g Celery root (0.5 Celery root)
  • 1 Carrot
  • 1 tsp Olive oil
  • Pepper
  • paprika powder
  • dried Marjoram
  • dried Thyme
  • 2 stems Parsley
  • 100 g Yogurt (3.5% fat)
  • 1 tbsp Peanut butter
  • Pinch Chili Flakes
  • 15 g Peanuts (1 tbsp)
  • 50 g Baby Spinach
  • 30 g Pomegranate seeds (2 tbsp)

Instructions

    Rinse quinoa, drain and cook with turmeric and double the amount of boiling salted water for 15 minutes. Then remove from heat and let stand to swell.

    Meanwhile, peel celery and carrot and cut into small cubes. Heat oil in a pan and sauté the vegetable cubes over medium heat for about 10 minutes, stirring occasionally. Season with salt, pepper and spices.

    Wash parsley, shake dry and chop finely. Mix yogurt with peanut butter and half of the parsley, season with salt, pepper and chili flakes. Chop peanuts.

    Place quinoa with spinach in two bowls and arrange the vegetables on top. Drizzle the Quinoa Vegetable Bowl with the sauce and sprinkle with nuts, the remaining parsley and pomegranate seeds.
