- 1 Red Onion
- 600 g watermelon (peeled)
- 2 tbsp pine nuts
- 1 lemon
- 4 tbsp olive oil
- 1 pinch sugar
- Salt
- Pepper (freshly ground)
- mint (for garnish)
- 200 g feta

Rinse, wash, and trim the arugula; if necessary, tear into smaller pieces. Peel and slice the onion into rings. Cut the watermelon into bite-sized cubes. Toast the pine nuts in a dry pan until golden brown, then let them cool.

Squeeze the lemon and whisk the juice with olive oil and sugar, seasoning with salt and pepper to taste. Arrange the arugula, melon, and onion rings on bowls, sprinkle the toasted pine nuts over them, and drizzle with the lemon vinaigrette. Garnish with mint leaves and serve, offering feta on the side if desired.
