Spicy Marinated Shrimp with Rice

Ingredients

  • 12 large shrimp (pre-cooked)
  • 2 fresh garlic cloves
  • 1 tsp freshly grated ginger
  • 2 tbsp Lime juice
  • 150 g yogurt
  • 1 tbsp Tandoori Masala spice mix
  • 250 g Basmati rice
  • 3 kaffir lime leaves
  • Salt
  • 4 tbsp Yogurt
  • curry powder

Instructions

    Rinse the shrimp and pat dry. Peel the garlic and press it into a bowl. Mix in ginger, lime juice, yogurt, and tandoori masala. Stir in the shrimp, cover, and marinate in the refrigerator for about 1 hour.

    Rinse the rice in a sieve and steam it with the kaffir lime leaves in a bamboo steamer according to the steamer instructions.

    Remove the shrimp from the marinade, skewer onto wooden sticks if desired, and grill over high heat (or in a grill pan) for 3-4 minutes on each side. Brush occasionally with leftover marinade. Just before serving, season lightly with salt. Serve each shrimp on a plate with a dollop of yogurt and a sprinkle of curry powder. Provide the rice alongside.
