Spicy Marinated Chicken Thighs

Ingredients
- 4 chicken thighs
- Salt
- freshly ground pepper
- Cayenne pepper
- 1 tsp paprika powder
- 3 tbsp oil
- 1 tbsp wine vinegar
- 3 tbsp liquid honey
- 2 rosemary sprigs
- 2 tbsp Light soy sauce

Stir paprika powder with oil, honey, vinegar and soy sauce. Season with salt, pepper and cayenne pepper. Wash the chicken thighs, pat dry and place them in a freezer bag with the mixture and rosemary. Seal and marinate for at least 2 hours.

Remove from the marinade and bake on a rack in a preheated oven at 180°C (under/over heat) for about 35-40 minutes. Place a pan with some water underneath to prevent fat from dripping into the oven. Brush with remaining marinade periodically. Finish with a pinch of salt and serve.
