Spicy Filled Puff Pastry Rolls

Ingredients
- 200 g Salmon fillet
- 150 g cream cheese (double cream level)
- Salt
- pepper (ground)
- 1 Garlic clove
- 1 handful mint
- 1 Shallot
- 150 g ham (slices)
- 150 g hard cheese (e.g., Gouda)
- 1 tbsp dried Italian herbs
- 2 sheets puff pastry (275 g each, refrigerated)
- 1 egg yolk
- 3 tbsp whipping cream

Preheat the oven to 200°C with top and bottom heat. Line a baking sheet with parchment paper.

Rinse the salmon, pat dry and cut into eight equal pieces. Mix the cream cheese with salt and pepper, add pressed garlic, stir and taste. Rinse the mint, shake dry and pluck the leaves.

Peel and finely chop the shallot. Dice the ham and cheese and combine with the shallot and herbs.

Roll out one sheet of puff pastry and cut it lengthwise once in half. Cut each half into four strips, making eight pieces total. Place about 1 tbsp cream cheese at one end of each strip, top with salmon and a few mint leaves. Roll up into rolls and place on the baking sheet. Repeat with the second dough sheet, filling with the ham-cheese mixture. Whisk the egg yolk with the whipping cream and brush over the rolls. Bake in the preheated oven for about 25 minutes until golden brown, then serve warm or cooled as desired.
