Ingredients
- 350 g puff pastry (4 square sheets; frozen)
- 200 g spinach
- 4 chicken breast fillets (about 140 g each)
- Salt
- ground pepper
- 2 tbsp olive oil
- 1 egg yolk
- oil for greasing the baking sheet

Let the puff pastry thaw while placed side by side.

Preheat the oven to 180°C fan.

Wash, trim, and briefly blanch the spinach in salted water. Cool and squeeze out excess moisture. Wash, pat dry, salt, pepper, and sear the chicken breasts quickly on all sides in hot oil. Wrap with spinach leaves. Roll each pastry sheet into a ~20 cm square and place a chicken breast in the center. Fold diagonally and seal edges. Place on an oiled baking tray.

Whisk the egg yolk with 1 tbsp water and brush over the croissants. Bake for about 30 minutes until golden brown.
