Ingredients

  • 1.5 kg chicken wings
  • 0.25 l ketchup
  • 2 tbsp brown sugar
  • 2 tbsp vinegar
  • 2 tbsp Soy sauce
  • 1 Garlic clove
  • 2 tbsp oil
  • Cayenne pepper
  • 1 unprocessed lime
  • 350 g tomatoes
  • 2 red chili peppers
  • 2 Garlic cloves
  • juice of half a lime
  • Salt
  • Pepper

Instructions

    Wash chicken wings, pat dry, place in a shallow dish. Mix remaining ingredients except the lime, press in garlic. Pour the mixture over the wings and cover overnight in a cool place, turning once.

    Line a baking sheet with foil, lightly oil it, arrange the wings on top. Brush off excess sauce, bake at 220°C for 15 minutes. Flip and cook another 5 minutes. Brush more sauce, flip again, coat the other side and bake for an additional 10 minutes.

    For the sauce, wash tomatoes, blanch hot, shock in cold water, peel, quarter, remove seeds, finely chop. Peel garlic, press into mixture. Halve chili peppers, remove seeds, finely chop, mix with sauce, season with lime juice, salt, and pepper. Serve wings with sauce and lime wedges.
