Spicy Cheese Fondue with Cheddar and Tortillas

Ingredients
- 3 red chili peppers
- 1 Garlic clove
- 2 Spring Onions
- 2 tbsp oil
- 250 g semi-hard goat cheese
- 250 g shredded cheddar
- 400 ml dry white wine
- 40 ml Tequila
- 1 Tbsp starch
- coriander leaves (for garnish)
- 8 small tortilla sheets

Wash the chili peppers, slit them lengthwise, remove seeds and finely chop. Peel the garlic and press it through a press. Wash and trim the spring onions and slice into thin rings. Heat the oil in a fondue pot and sauté the chili, garlic, and spring onions for 1 minute. Pour in the wine and gradually add the cheeses, stirring constantly with a wooden spoon and letting them melt over low heat; then bring to a gentle boil and let simmer slightly.

Whisk the starch with tequila until smooth, pour into the cheese mixture and stir until the sauce is creamy. Keep warm on a double boiler over low flame and garnish with coriander leaves. Warm the tortillas in the oven, cut into wide strips, roll them for dipping, skewer, and dip through the cheese.
