A vibrant carrot cocktail featuring garden cress flowers that delivers twice the daily recommended amount of beta-carotene, which is converted to vitamin A as needed.

Ingredients

  • 20 g garden cress (with flowers; or watercress; 0.5 bunch)
  • 1 Clementine
  • 100 ml carrot juice (unsweetened)
  • Ice cubes
  • 100 ml sparkling mineral water (ice cold)

Instructions

    Wash the garden cress and shake dry. Set aside 1-2 nice flowers, roughly chop the rest of the leaves.

    Halve the clementine and squeeze out the juice. Blend the juice with the cress, carrot juice, and ice cubes in a stand mixer until smooth. Pour into a glass, top with sparkling mineral water, and garnish with garden cress flowers.
