Ingredients
- 4 hard boiled eggs
- 250 g sausage meat
- 3 tbsp breadcrumbs
- 2 egg yolks
- 1 Shallot
- 1 tbsp butter
- 1 tbsp chopped parsley
- 100 g breadcrumbs
- 1 Egg white
- frying oil
Instructions

Peel the shallot, halve it and dice finely; sauté in a little butter until translucent. Mix the sausage meat with the egg yolks, breadcrumbs, parsley and diced shallots into a cohesive mixture.

Wrap each boiled egg with the meat mixture, then roll in egg white and breadcrumbs. Fry until golden brown, drain on paper towels.
