Smart Potato Gratin

Spoonsparrow potato gratin tastes as good as a side dish or main course!

Ingredients

  • 600 g mostly waxy potatoes
  • 1 Parsnip
  • 1 Garlic clove
  • 350 ml whipping cream (or soy cream)
  • Salt
  • Pepper
  • nutmeg
  • 30 g Parmesan (1 piece; 30% fat in the product)
  • 2 sprigs dill

Instructions

    Clean and peel potatoes and parsnip, then slice them thinly (~5 mm) on a cutting board or use a mandoline so they stay whole and lie close together.

    Peel garlic and rub it into a baking dish. Arrange potato and parsnip slices in the dish and press them flat. Finely chop the garlic and mix with cream, salt, pepper, and a pinch of freshly grated nutmeg.

    Pour the cream mixture over the potatoes. Bake the gratin in a preheated oven at 225 °C (200 °C fan, gas: level 3‑4) for about 35 minutes.

    Meanwhile grate the Parmesan finely. Sprinkle it over the potatoes and bake for another 10 minutes. Wash, dry, and scatter dill sprigs on top of the gratin.
