Spiced Mulled Wine Foam

Try the delicious mulled wine foam with cinnamon from Spoonsparrow!

Ingredients

  • 1 Organic Orange
  • 6 very fresh egg yolks
  • 80 g powdered sugar
  • 1 pinch salt
  • 160 ml mulled wine
  • 4 cinnamon sticks

Instructions

  1. 1.

    Wash the orange hot, pat dry and zest the peel (use the rest of the orange elsewhere).

  2. 2.

    Separate the eggs (reserve the whites for another use). In a metal bowl combine the egg yolks with powdered sugar, 1 pinch salt and 1 tbsp water. Whisk very frothy over a double boiler using the hand mixer paddles.

    While whisking, gradually pour in the mulled wine, stirring vigorously to incorporate.

  4. 4.

    Cool the mixture by placing it in an ice bath. Pour into four glasses and garnish each with one cinnamon stick and a touch of orange zest.
