Spelt and Spinach Bowl with Peanut Dressing

Ingredients

  • Salt
  • 200 g Spelt
  • 120 g Peanuts
  • 1 Lime
  • 400 g Green Beans
  • 1 tbsp Olive Oil
  • Pepper
  • 200 g baby spinach
  • 100 g Red Grapes

Instructions

    Bring 400 ml of salted water to a boil. Add the spelt and simmer covered over medium heat for 25-30 minutes. Meanwhile, soak the peanuts in 200 ml of water for 15 minutes. Halve and juice the lime.

    In the meantime, clean, wash, and cook the green beans in boiling water over medium heat until al dente (7-8 minutes). Then drain, shock in cold water, and drain well. Heat the oil in a pan. Fry the beans in it for 3 minutes over medium heat and then season with salt and pepper.

    Clean and wash the baby spinach and grapes. Halve the grapes, removing the seeds if necessary. For the dressing, puree the peanuts with the soaking water and season with salt, pepper, and 2 tbsp of lime juice.

    Arrange the drained spelt, green beans, spinach, and grapes in 4 bowls and drizzle with the dressing.
