Ingredients
- 16 sheets rice paper (from an Asian store)
- 1 red chili pepper
- 0.5 cucumber
- 8 shrimp (prepped, peeled and deveined)
- 150 g green Thai asparagus
- Salt
- 0.5 bunch Chives
- 8 lettuce leaves (romaine)
- sesame oil
- 1 tbsp Rice vinegar
- 1 tsp fish sauce
Instructions

Soak each sheet of rice paper individually between two damp kitchen towels or parchment paper.

Wash the chili pepper, deseed and finely chop it.

Peel and deseed the cucumber and cut into sticks. Trim, wash and boil the asparagus in salted water for about 5 minutes until al dente. Drain well. Wash lettuce leaves and dry them. Heat 1 tbsp sesame oil and quickly sauté the shrimp in it. Season with salt. Wash chives and cut into thirds.

Whisk together 2 tbsp sesame oil, rice vinegar, chili and fish sauce to make a sauce.

Lay two sheets of rice paper on top of each other, place one lettuce leaf on top and spread slightly flat. Place one shrimp, cucumber sticks, chives and asparagus in the center, drizzle with some sauce, fold one side over and roll tightly. Seal the edges with a little water.

Serve cold with chopsticks.
