Spanish Marinade

Ingredients

  • 4 cloves garlic
  • 125 ml sherry
  • 2 tbsp honey
  • 4 schnitzels (chicken, veal or turkey)
  • cayenne pepper to taste
  • 2 tbsp oil
  • salt to taste

Instructions

    Peel and finely chop the garlic. Bring the sherry to a gentle boil in a small saucepan.

    Add the honey and garlic; simmer gently for 1 minute, then let cool slightly. Season the schnitzels generously with cayenne pepper and place them in a bowl. Pour the sauce over the meat and refrigerate for 12 hours.

    Heat a pan over medium heat, pat the schnitzels dry with paper towels, and sear each side for 3–4 minutes, seasoning with salt.
