Brazilian-Style Breaded Chicken Croquettes

Ingredients
- 3 chicken thighs
- 500 ml chicken broth
- 450 ml milk
- Salt
- 125 ml vegetable oil
- 500 g flour
- 1 onion
- 3 Garlic cloves
- 3 tbsp olive oil
- black pepper (ground)
- 2 tbsp chopped cilantro
- 3 eggs
- 4 tbsp heavy cream
- 80 g breadcrumbs
- fat for frying

Bring the chicken thighs to a boil in the chicken broth and simmer covered over low heat for about 35 minutes, until the meat easily pulls away from the bone. Remove from the broth, let cool, and shred the meat off the bones.

Measure out 450 ml of the broth and bring it back to a boil. Add milk, 1 tbsp salt, and the oil. Add all the flour at once and stir vigorously. Continue cooking while stirring until the resulting dough lifts from the bottom of the pot. Remove from heat and let cool.

Peel and chop the onion and garlic. Heat the olive oil in a pan, sauté the onion and garlic until translucent. Add the shredded chicken, cook briefly, season with salt and pepper, add cilantro, and let cool.

Take a small piece of dough for each croquette and place about 1 tsp of filling from the pan in the center. Shape the dough around the filling and seal. Beat the eggs with cream, dip the dough pieces, then roll them in breadcrumbs. Fry portions in hot fat until golden brown.
