Chicken with Okra

Ingredients

  • 1 chicken (about 1.2 kg)
  • 5 garlic cloves
  • Salt
  • black pepper (freshly ground)
  • 2 small onions
  • 6 tbsp vegetable oil
  • 1 tsp turmeric
  • a pinch of sweet paprika powder
  • 700 ml poultry broth
  • 600 g okra pods
  • 0.5 lime (juice)
  • coriander leaves (for garnish)

Instructions

    Rinse the chicken, pat dry and cut into eight pieces using a poultry shears. Peel the garlic and press three cloves through a press. Rub the chicken pieces with the garlic, salt and pepper. Peel and finely chop the onions. In a large pot heat 2-3 tbsp oil over medium heat and brown the onions until light brown. Sprinkle turmeric over them, stir briefly, then add the chicken pieces and sear all sides. Dust with paprika powder, pour in broth until the meat is covered, cover and simmer for 30–40 minutes, adding liquid if needed.

    Finely chop the remaining garlic. Wash and trim the okra, then sauté it with the leftover oil and garlic for about 5 minutes while turning. Deglaze with a little water and lime juice, steam for another ~5 minutes. Season with salt, fold into the chicken, taste again, and serve garnished with coriander leaves.
