Spaghetti with Vegetable Shrimp Sauce

Ingredients
- 400 g shrimp (or pre‑cooked)
- 2 tbsp lemon juice
- 2 stalks leeks
- 1 bell pepper
- 1 onion
- 2 Garlic cloves
- 400 g spaghetti
- Salt
- 2 tbsp olive oil
- 0.125 l white wine
- 100 ml Vegetable broth
- 1 chili pepper
- 150 g Herb Cream Cheese
- chives (for garnish)

Rinse the shrimp, place them in a bowl and drizzle with lemon juice. Clean the leeks, cut lengthwise, wash, and finely chop. Wash the bell pepper, clean it, dice very finely and add. Peel and finely dice the onion and garlic. Cook the pasta in plenty of boiling salted water until al dente.

Heat oil in a pan, sauté onions and garlic for about 5 minutes until golden yellow. Add leeks and bell pepper. Pour in wine, stir in vegetable broth, and simmer the vegetables over low heat for about 5 minutes. Dice the chili pepper finely and stir it in. Mix in the cream cheese and shrimp and let it thicken for 2–3 minutes. Season with salt, drain the pasta and fold it into the sauce. Plate and garnish with chives.
