Ingredients
- 400 g spaghetti
- 100 g carrots
- 100 g kohlrabi
- 100 g Celery Root
- 100 g leeks (white part only)
- 300 g peeled, seeded, coarsely diced tomatoes
- 1 Garlic clove
- 1 shallot (finely diced)
- 1 tbsp Olive Oil
- 2 tbsp Tomato paste
- 1 tbsp mixed Italian herbs (chopped)
- Salt
- Pepper
Instructions

Wash, peel, and finely dice kohlrabi, celery root, and carrots; clean and slice leeks into thin rings.

Sauté shallot with pressed garlic until translucent; add vegetables for about 3 minutes, stir in tomato paste, season with salt and pepper, and simmer gently for ~15 minutes, then fold in herbs at the end.
