Artichoke Pasta with Seafood

Ingredients

  • 12 very small artichokes
  • 200 g scampi (pre-cooked or shrimp)
  • 1 tbsp chopped parsley
  • 2 Garlic cloves
  • 1 Shallot
  • 1 untreated lemon (zest)
  • 250 g spaghetti
  • 2 tbsp sweet cream butter
  • red pepper flakes
  • 150 ml dry white wine
  • 2 tbsp olive oil
  • black pepper (ground)
  • Salt

Instructions

    Wash the artichokes, remove stems and lower leaves. Bring 2 L water with a small piece of lemon to a boil in a pot and simmer covered for about 12 minutes. Remove artichokes, drain, let cool, then slice lengthwise into thin strips.

    Peel and dice garlic and shallot. Cook pasta in the artichoke water al dente, reserve some pasta water, then keep warm at 70°C.

    Add artichoke strips to a pan, add butter, and sauté until golden. Add scampi, shallot, red pepper flakes, and garlic; cook briefly. Deglaze with white wine and reserved pasta water. Stir in olive oil and parsley, remove from heat, and fold in the hot pasta immediately. Season with pepper and salt as needed.
