Ingredients
- 500 g spaghetti
- 1 Shallot
- 1 Garlic clove
- 2 EL olive oil
- 1 kg tomatoes
- Sea salt
- Cayenne pepper
- a pinch sugar
- 40 g parmesan (freshly grated)
- basil (for garnish)
Instructions

Cook spaghetti according to package instructions until al dente.

Peel and finely chop shallot and garlic.

Heat tomatoes, shock in ice water, peel, quarter, seed, and dice.

Sauté shallot and garlic in hot oil, add tomatoes and simmer for about 10 minutes. Season with salt, cayenne pepper, and sugar.
