Spaghetti with Tomato Sauce

Ingredients
- 400 g spaghetti
- 2 large white onions
- 4 large tomatoes (yellow tomatoes can also be included)
- 2 tbsp finely chopped basil
- olive oil
- Salt
- Pepper (freshly ground)
- 1 pinch cayenne pepper
- 1 tsp sugar

Peel, halve and slice the onions crosswise. Wash the tomatoes, blanch them, peel and cut into small pieces. Heat 3 tbsp oil in a pan and gently sauté the onions over medium heat, stirring frequently. When the onions are quite soft, add the tomatoes and continue to cook for another 2-3 minutes. Season with salt, pepper, cayenne pepper, basil and sugar. Cover and let simmer.

Cook spaghetti in plenty of salted water until al dente. Drain and immediately toss with the sauce. Serve steaming hot. Freshly grated Parmesan or Roman Pecorino pairs well.
