Spaghetti with mushrooms is a perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients
- 800 g Portobello gourmet mushrooms
- 1 small onion
- 4 Tbsp chives
- 400 g Whole Wheat Spaghetti
- Salt
- 5 tbsp butter
- Pepper (freshly ground)
- a pinch of freshly grated nutmeg
- a splash of lemon juice
- freshly grated Parmesan to taste
Instructions

Clean the mushrooms, wipe them with a damp kitchen towel and slice into thin strips. Peel the onion and finely dice it. Wash the chives and cut into small ribbons.

Cook the spaghetti in plenty of salted water according to package instructions until al dente. Drain and set aside.

Heat butter in a pan and sauté the mushrooms until the liquid has evaporated. Season with salt, pepper, nutmeg and a splash of lemon juice.

Fold in the cooked spaghetti, warm briefly if needed, and divide among four pre-warmed plates. Sprinkle chives and freshly grated Parmesan over the mushroom-spaghetti and serve immediately.
