Ingredients

  • 800 g beef sirloin (flat roastbeef)
  • 3 tbsp oil
  • 1 tbsp butter
  • 800 g small new potatoes
  • 0.5 bunch rosemary
  • 1 tbsp paprika powder (sweet)
  • Salt
  • black pepper (freshly ground)

Instructions

    Take the meat out of the refrigerator about an hour before roasting. Then wash, pat dry, season with salt and pepper, and sear on all sides in 1 tbsp hot oil. Remove from pan and place on a baking rack (with a fat pan underneath) in a preheated oven at 100°C for about 60-70 minutes until pink (longer or shorter depending on thickness). Check the core temperature with a meat thermometer (pink 55°C).

    Wash, peel, and place the potatoes in an oven-safe dish. Remove rosemary sprigs and scatter over the potatoes. Season with salt and paprika, add remaining oil and butter flakes, then put the roastbeef and potatoes together in the oven and bake for about another hour, turning occasionally.

    Remove the meat from the oven, cover with foil and let rest for about 5 minutes, then slice thinly and arrange on plates. Season to taste with salt and pepper, add the potatoes, and serve with herb butter.

    For the herb butter mix 50 g room-temperature butter with herbs of choice (e.g., parsley and chives), optionally squeeze in garlic, season with salt, blend well, and chill until ready to use.
