Ingredients

  • 500 g Tagliatelle
  • Salt
  • 6 tomatoes
  • 2 Garlic cloves
  • 1 chili pepper
  • 100 g pancetta
  • 2 tbsp olive oil
  • Pepper (freshly ground)
  • 1 tbsp freshly chopped parsley
  • 40 g grated Parmesan

Instructions

    Cook the tagliatelle in salted water until al dente.

    Blanch the tomatoes, cool them, peel, quarter, deseed and dice. Peel and finely chop the garlic. Wash, halve, clean and finely chop the chili pepper. Slice the pancetta into strips and quickly sauté it with the garlic and chili in hot oil. Add the tomatoes and simmer for about 5 minutes. Season with salt and pepper. Toss the drained pasta and divide onto plates.
