Spaghetti with Cream Sauce and Shrimp

- 500 g spaghetti
- 5 tbsp crème double
- 500 ml whipping cream
- 0.5 lemon (juice)
- 20 g shrimp (pre-cooked)
- 5 spring onions
- 1 tbsp butter
- a handful basil
- Salt
- freshly ground pepper

Cook spaghetti in plenty of boiling salted water until al dente. Wash the spring onions, trim the roots and slice lengthwise into thin strips. Rinse the shrimp, pat dry, drizzle with lemon juice and season. Sauté the spring onion strips in butter in a pan, add crème double and whipping cream, bring to a boil and reduce slightly.

Season the sauce with lemon juice, salt and pepper; thicken with a little starch or sauce binder if desired. Add the shrimp to the sauce and cook until heated through. Mix the spaghetti into the finished sauce and serve on pre-warmed plates. Garnish with basil leaves and freshly ground pepper.
