Ingredients
- 200 g spaghetti
- 150 g shrimp (pre‑cooked, deveined and peeled except for the tail segment)
- 1 tbsp Olive Oil
- 1 bunch arugula
- a splash white wine
- ½ tsp lemon zest
- 100 g cocktail tomatoes
- 30 g freshly grated Parmesan
- Sea salt
- freshly ground pepper
Instructions

Cook pasta in plenty of salted water according to package instructions until al dente.

Rinse and pat shrimp dry with paper towels.

Wash, trim and remove tough stems from arugula.

Wash and quarter cocktail tomatoes.

Sauté shrimp in hot oil. Deglaze with white wine, then add tomatoes, arugula and lemon zest. Simmer for about 1–2 minutes.

Drain pasta, reserve a little cooking water, toss with the sauce, season with salt and pepper, and serve sprinkled with Parmesan.
