Ingredients
- 24 scampi
- 2 ripe mangoes
- 24 Cherry tomatoes
- a few sprigs of lemon thyme
- soy sauce
- oil
- 12 skewers

Wash the scampi, peel to the tail fin, remove the gut and pat dry. Peel the mangoes. Separate the flesh from the pit and dice. Wash the cherry tomatoes and pat dry.

Rinse the lemon thyme sprigs and pat dry. Alternate threading mango cubes, tomatoes, scampi, and thyme sprigs onto 12 skewers and drizzle with soy sauce. Drizzle the skewers with oil and grill until golden brown. Season with salt and pepper. Mango chutney pairs well.
