Spaghetti with Olives

Ingredients

  • 400 g spaghetti
  • 4 tbsp olive oil
  • 2 cloves garlic
  • 250 g stuffed olives (with paprika or tomato filling)
  • 4 tbsp pine nuts
  • 2 tbsp chopped parsley
  • Salt
  • Pepper (freshly ground)
  • parmesan (for sprinkling)

Instructions

    Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until "al dente".

    Meanwhile, peel and chop the garlic; split the olives in half. Toast the pine nuts in a non‑stick pan over medium heat, turning frequently until golden brown—watch closely so they don’t burn!

    Heat the olive oil in a pan, lightly sauté the garlic, add the olives and warm briefly without browning them. Remove from heat.

    Drain the cooked pasta into a colander, immediately toss with the garlic‑olive mixture and pine nuts, then plate on warmed dishes. Sprinkle with parmesan and parsley before serving.
