Pasta with Spinach and Salmon

Ingredients
- 300 g salmon fillet
- 2 tsp grated lemon zest
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- 4 tbsp olive oil
- 400 g penne
- 250 g Spinach
- 1 onion
- 1 small garlic clove
- 250 ml broth (instant)
- 250 g ricotta
- nutmeg
Instructions

Wash the salmon, pat dry and slice into thin pieces. Place in a bowl. Mix lemon zest, lemon juice, pepper and 1 tbsp olive oil. Add to the salmon, stir and let marinate briefly.

Cook pasta in plenty of boiling salted water until al dente.

Clean, wash, drain and roughly tear the spinach. Peel onion and garlic, dice finely. Heat remaining olive oil in a pot. Add onion and garlic cubes and sauté. Add the spinach and let it wilt.

Pour in broth, stir in ricotta, bring to a boil once, then season with salt, pepper and nutmeg.

Add the marinated salmon to the hot sauce. Drain pasta, allow to dry slightly and add to the sauce.

Toss everything together, plate on warmed dishes and serve immediately.
