- 1 Carrot
- 100 g Celery Root
- 1 onion
- 1 Garlic clove
- 50 g smoked ham
- 4 tbsp olive oil
- 400 g mixed minced meat
- 1 tbsp Tomato Paste
- 100 ml red wine
- 250 ml rich beef broth
- Salt
- Pepper
- 400 g diced tomatoes (canned)
- 2 tbsp freshly chopped parsley
- 500 g spaghetti
- Freshly grated Parmesan (optional)

Peel, trim and finely dice the carrot and celery root. Peel and finely chop the onion and garlic. Finely chop the ham as well. Heat the oil, brown the ham, then add the minced meat over high heat, stirring until crumbly. Add the carrots, celery, onion, and garlic, letting them wilt for a few minutes. Stir in the tomato paste, deglaze with wine, and pour in the beef broth. Season with salt and pepper, then stir in the diced tomatoes. Simmer for about 45 minutes, stirring occasionally, adding more broth if needed.

Cook the spaghetti according to package instructions until al dente.

Stir parsley into the sauce and adjust seasoning with salt and pepper. Drain the pasta and place on plates. Pour the sauce over the noodles and garnish with parsley. Serve with Parmesan if desired.
