Ingredients

  • 1 onion
  • 1 large carrot
  • 1 tbsp Olive Oil
  • 400 g ground beef
  • 1 Garlic clove
  • 2 tbsp Tomato paste
  • Salt
  • Pepper
  • 1 small can peeled tomatoes
  • 80 ml red wine
  • 400 g spiral pasta
  • 100 g grated cheese (e.g., Gouda)
  • 2 tbsp chopped parsley

Instructions

  1. 1.

Peel the onion. Peel and wash the carrot. Dice the prepared vegetables into small cubes.

  2. 2.

Heat olive oil in a non-stick pan and brown the ground beef until crumbly. Add the onion and carrot. Peel the garlic, crush it, and cook briefly with the mixture.

  3. 3.

Stir in tomato paste and the peeled tomatoes. Smash the tomatoes with a cooking spoon. Pour in red wine. Simmer everything into a thick sauce for about 20 minutes. Season with salt and pepper.

  4. 4.

Meanwhile, cook spiral pasta in plenty of boiling salted water according to package instructions until al dente. Drain, rinse under cold water, and let it dry on a sieve.

  5. 5.

Stir in 1 tbsp parsley into the sauce. Taste and adjust seasoning if needed.

  6. 6.

Combine the pasta with the sauce and transfer to a greased baking dish. Sprinkle grated cheese over the top and bake in a preheated oven at 200 °C (fan: 20‑30 minutes). Garnish with remaining parsley and serve.
