Ingredients
- 400 g spaghetti
- Salt
- 20 g dried tomatoes
- 2 tbsp olive oil
- 4 jumbo shrimp (peeled and deveined)
- 150 g cherry tomatoes
- 100 ml dry white wine
- Pepper
- 40 g shaved Parmesan
- basil (for garnish)

Cook the pasta in salted water until al dente.

Chop the dried tomatoes. Quickly sauté them in hot oil in a pan. Rinse and pat dry the shrimp and cherry tomatoes, then add them to the pan with the tomatoes and cook for 2-3 minutes. Deglaze with wine and simmer for another 2-3 minutes until the liquid has evaporated. Season with salt and pepper.

Drain the pasta (add a splash of pasta water if desired) and arrange it on plates.

Sprinkle with Parmesan and garnish with basil before serving.
