Ingredients

  • 400 g spaghetti
  • Salt
  • 100 g peeled, ground almonds
  • 4 tbsp coarsely chopped almonds
  • 250 g ricotta
  • 2 tbsp freshly grated Parmesan
  • 1 nutmeg (freshly grated)
  • 0.5 tsp cinnamon
  • 100 ml heavy cream
  • 3 tbsp olive oil
  • black pepper (ground)
  • 2 tbsp butter

    Cook the spaghetti in plenty of boiling salted water until al dente. Reserve 1 cup of cooking water. Mix the almonds with ricotta, Parmesan, nutmeg, cinnamon, cream and olive oil. Add some reserved cooking water and season with salt and pepper.

    Drain the spaghetti, toss it with the almond sauce, add butter shards, taste, and serve on preheated plates.
